Sometimes, cakes don't turn out EXACTLY like I plan. This was supposed to have brown butter icing, and a beautiful chocolate drippy top. I'm terrible at the drippy top. I practiced on my pan. I thought everything was the right consistency and temperature... and then it glopped. SO, we get this more "rustic" looking cake. But it's Soooooooooo good.

What You Need
For the Cake:
6 oz. chopped unsweetened chocolate
¾ cup whole milk
1 ½ cups brown sugar
½ cup unsalted butter at room temperature
3 eggs at room temperature
1 ½ tsp. vanilla
2 cups all-purpose flour
1 tsp. salt
1/4 cup cocoa powder
1 ½ tsp. baking powder
½ tsp. baking soda
¾ cup buttermilk (or 3/4 cup whole milk + 1 Tbsp. vinegar)
1/4 cup brewed coffee at room temperature

For the Icing:
1 1/2 cups (3 sticks) unsalted butter
1 tsp. vanilla (not immitation)
4 1/2 cups powdered sugar
5-6 Tbsp. whole milk
*optional: 1/4 tsp. salt

For the Ganache:
1/3 cup heavy cream
2-2.5 oz. dark chocolate, chopped

Make The Cake:

Preheat oven to 350-degrees (F). Grease the sides of three 6" x 2" cake pans with shortening (or pan goop) and line the bottom of the pan with parchment paper.

In a small saucepan over medium-low heat, combine 6 oz. chopped chocolate, 3/4 cup milk and 3/4 cup of the brown sugar. Stir constantly to prevent the chocolate from sticking to the bottom of the pan.
When all of the chocolate is melted, remove pan from heat and let cool to lukewarm.

In a medium bowl, whisk together 2 cups flour, 1 tsp. salt, 1/4 cup cocoa powder, 1 1/2 tsp. baking powder and 1/2 tsp. baking soda. Set aside.

Combine the 1 tsp. vanilla, 3/4 cup buttermilk (or milk + vinegar), and 1/4 cup cooled, black coffee. Set aside.

In a mixing bowl, cream the 1/2 cup butter and remaining ¾ cup brown sugar until light and fluffy, about 3 minutes. Add each of the 3 eggs, one at a time, mixing well after each egg.
Add half of the flour mixture to the mixing bowl. Mix at low speed until just combined.

Add the melted chocolate mixture. Mix.
Add the rest of the flour mixture. Mix.
Add the milk mixture. Mix until well combined, scraping down the bowl at least once.

Pour 1 1/2 - 1 3/4 cups of batter into the prepared pan(s). (I use Bake-Even Strips to help keep my cakes more flat while baking. This helps later when you want to stack the cakes.)
Bake on center rack of 350F oven for 35-40 minutes or until toothpick inserted near the center comes out dry with few crumbs on it.

Immediately place pan on cooling rack. After 10 minutes, invert the cake onto a cooling rack to cool.

Let cake cool completely.

Make the Icing/Frosting:

Seriously, this icing is SO amazing. I want to eat it all day every day.
Melt all three sticks of butter on medium heat in a light-colored pan. (This is important because you need to see the color change.) -- Yes, there are only two in my pictures. That's because I didn't make enough to fill and cover this cake. You will likely have some extra with 3 sticks of butter, but it's fine, because you'll want to sit down and tuck into it with a spoon anyway.
Stirring constantly, watch the butter as it first forms a white foam...

Then gets separated and very bubbly and spluttery...

Then the bits begin to turn light brown on the bottom of the pan.
REMOVE from the heat immediately, when the browning happens. It can burn quickly. You will smell a major difference when it starts to brown. It smells like heaven.
Immediately pour into a small heatproof bowl to cool (30 minutes or so).

When the butter is at room temperature, alternate adding 2 cups of powdered sugar and 2 Tbsp. of milk. Mixing completely after each addition.
2 cups powdered sugar. Mix. 2 Tbsp. milk. Mix.
2 cups powdered sugar. Mix. 2 Tbsp. milk. Mix.
1/2 cup powdered sugar. Mix. 1-2 Tbsp. milk + 1 tsp. vanilla. Mix. (Use 1 Tbsp. if you like the icing a little more thick. 2 Tbsp. if you like it a little more thin.)

Assemble the Cake:

Each 6"x2" round cake should be leveled and torted or cut into two layers. (I prefer using a cake leveler. -- the best $5-$10 kitchen gadget around -- but you can also use a bread knife. Just be sure to make a mark along the side so that you can line it up when you re-stack them to keep things even.)

Spread a scant 1/4 cup icing between each layer. Then, cover the cake with icing. (As I said above, I didn't make enough icing, so you can see mine is rather thin. Yours should cover the cake better.)
Here's a tutorial on how to cover a cake with icing, if you're struggling.

Place in the refrigerator for at least an hour to let the icing firm up and get cold.

Make the Ganache:

You will want to make the ganache right when you're ready to drizzle it, or else it will cool too much and not drip -- that wasn't exactly what I did wrong, but I've messed it up that way before.

Heat 1/3 cup heavy cream in the microwave for 30 seconds on high. Add the chocolate to the cream, and let set for 30 seconds. Stir to combine using a small whisk or fork. It will look like a mess at first, but will eventually come together into a gorgeous ganache. Be patient. And know that you will slosh some out at first.

If you want to do a beautiful dripping cake... hopefully, you will be better than I was. Practice on an overturned cake pan if you've never done it before. I'd show you with my pictures, but I didn't take any... and then I failed. (Here's a link to a cake that I kind of succeeded with the drippys.)

So, you can also spread the ganache all willy-nilly around the cake, mixing and swirling with the brown butter icing, and make it "rustic."

Then... slice, and enjoy the heck out of this amazingly yummy cake!

My children are spoiled. Every time they return from any kind of trip -- camping, time with their grandparents, etc. -- they expect a new treat. I oblige. This time... homemade ice cream sandwiches made with peanut butter cookies, store-bought ice cream and mini chocolate chips. They were actually not that hard to make, considering how amazingly yummy they were!!

What You Need:
For the Peanut Butter Cookies:
1 egg
1 cup sugar
1 cup peanut butter

2-3 cups Store-bought or homemade ice cream
1-2 cups mini chocolate chips, chopped peanuts, rainbow sprinkles, mini m&ms, etc.

Yield: 5-6 2-3" ice cream sandwiches

This Mother's Day weekend, I get the pleasure of spending my special day at a baseball tournament. So, I decided to make some "Baseball Flowers" for myself and the other Baseball Moms. I wish I'd had better flower cookie cutters, but these will do.

(I also did make a dozen regular baseballs for the players because, well, I want the moms to actually get to eat their cookies.)

If you're interested in making something similar... here are recipes and tutorials:

Happy Mother's Day to all of you Momma's out there!
Every summer, my family goes camping on the North Shore of Lake Superior... well, most of my family. I stay home. I am not a camper. So, I bake for their return. This year, I made these decadent (and easy) Peanut Butter Cup Cupcakes.

What You Need:
Chocolate Cake Mix (and eggs, milk, etc. as needed to prepare)
2 dozen (full-sized) Reese's Peanut Butter cups
For the icing:
1/2 cup unsalted butter, softened
1/2 cup creamy peanut butter
1 tsp. vanilla extract
1/2 cup cocoa powder
2 cups powdered sugar
1-2 Tbsp. whole milk (as needed)

Prepare the cake mix according to the directions on the box.
Line cupcake tins with paper cupcake liners. Put 1 Tbsp. cake mix in the bottom of each liner. Set unwrapped peanut butter cup on top of batter. (This is so that it doesn't get melty when you try to eat it.) Spoon 3 Tbsp. batter on top of peanut butter cup. Bake according to package directions. (350-degrees for 15-18 minutes.)

Make the Icing
Combine butter and peanut butter in a medium-sized mixing bowl. Add vanilla. Mix well. Add cocoa powder. Mix well. Add powdered sugar. Mix well. If the icing is too thick to spread/pipe, add milk, one tablespoon at a time.

When the cupcakes are cooled, pipe an icing swirl on each. Garnish with a sprinkle of chopped peanut butter cups (or peanuts).

Enjoy!
These nests are made from gluten-free no-bake chocolate cookies, and topped with Cadbury chocolate eggs and Peeps. They take about 25 minutes total to make, and are easy to let your little ones help with.

1 stick unsalted butter

1 1/2 cups granulated sugar
4 Tbsp. cocoa powder (not 'special dark')
1/2 tsp. salt
1 tsp. vanilla
1 cup peanut butter (crunchy or creamy okay)
3 cups regular or quick oats

Yield: 2 dozen 3" cookies

Chocolate Pie with a Pretzel Crust and Peanut Butter swirls. My boys and I worked together to make this perfect-for-Daddy birthday pie. (Which is why I have no pictures of the process, sorry.)

What You Need:
2 cups crushed pretzels
1/2 cup melted butter
3 eggs (separated)
1/2 cup sugar
1 tsp. vanilla
2 cups heavy cream
12 oz. semi-sweet chocolate chips
1/4-1/2 cup creamy peanut butter

Make the Crust:
Preheat oven to 350-degrees (F).
Crush pretzels to small crumbs and pour into a medium-sized mixing bowl.
Melt the butter. Add to the pretzel crumbs, and stir to combine.
Separate one egg. Add the egg white to the pretzel mixture. Place the egg yolk into another small mixing bowl.
Mix the egg white with the pretzel crumbs and butter (be sure to add the white after you've combined the butter and crumbs or you could heat the white too much).
Press the pretzel mixture into an 8-9" pie pan. (This is sticky business.)
Bake for 15-20 minutes or until the crust is crispy and golden.

Make the Filling:
While the crust is baking, make the chocolate filling.
Whisk the two remaining eggs, and the one yolk with the sugar and vanilla in a mixing bowl until well-combined and airy.
Heat the cream in a medium saucepan over medium heat until bubbles form around the edges.
Slowly pour the heated cream into the egg mixture, whisking constantly while pouring a thin stream of hot cream into the eggs. (Being careful not to "cook" the eggs.) When it's fully combined, pour the mixture back into the pan, and heat over medium heat until it thickens.
Remove from heat, and add the chocolate chips. Stir well to combine.

Make the Pie and Chill overnight:
Pour the filling into the pie crust.
Add the peanut butter. (I warmed the peanut butter in the microwave for 20 seconds, then poured it into a zip-top sandwich bag. Cut the corner, and squeezed it onto the top of the pie. If you want it to swirl down into the pie, use a butter knife to swirl it in.)

Refrigerate for at least 5 hours to overnight.

Note: This is very, very rich pie. Cut into small pieces and serve with milk or coffee!
This chocolate cake received rave reviews from our entire Fourth of July party. It was so rich, so tasty, and best-of-all... It's flourless, so our friends with dietary restrictions were as happy with it as we sugary gluten eaters!
It did taste more like a brownie than cake, but it was still very good. My favorite thing is that it is adapted, ironically, from This recipe found on the King Arthur Flour website. And it is so easy that my eight-year-old did most of the work making it.

What You Need:
1 cup semisweet chocolate chips
2 sticks (1 cup) unsalted butter
1 1/2 cup sugar*
1/2 tsp. salt
2 tsp. finely ground coffee or espresso powder
1 Tbsp. vanilla
6 eggs (at room temperature)
1 cup cocoa powder

* Note: I am going to test this with just 1 cup sugar next time to lower the carb count even more, I'll let you know how that goes.

This recipe is amazing.
I found it in the Busy in Brooklyn blog a few months ago when making a special S'mores treat for my sister's wedding festivities. I changed it just a little, as I like a little more s'moresy goodness on top.

I highly recommend making it only when you have somewhere to take it, or you may end up eating the entire batch all alone! It is also called "S'Mores Crack," and for good reason!

What You Need:
2 sleeves honey graham crackers
2 sticks (1 cup) butter
1 cup brown sugar
1 tsp. vanilla
pinch of salt (if using unsalted butter)
1 1/2 cups mini chocolate chips
2-4 cups mini marshmallows

My boys and I made these homemade hot cocoa gifts for their teachers this year. Just because I thought they needed it, I also threw in a mini bottle of schnapps to flavor their cocoa. They work with second graders all day. They deserve it!

1 cup Hershey's Special Dark Cocoa Powder
2 1/2 cups granulated sugar
2 Tbsp. corn starch
1/2 cup mini chocolate chips

Okay, so I love this cake... like L-O-V-E love it!
I was jumping up and down around the kitchen when I finished it, I was so happy with it.

My sister's wedding reception was held at a nature center. And she and her hubby love to do all kinds of nature-y things. So, when I was trying to think of a way to bring in the groom's favorite kind of cake (chocolate with raspberry filling), I thought of this, realizing that you could "carve" the ganache to look like bark, and it would not be all that hard to make.

What You Need:
Cake
This was one 10"x2" round layer, two 9"x2" round layers and one 8"x3" round layer
Milk Chocolate Ganache:
 - 16 oz. heavy whipping cream
 - 32 oz. milk chocolate (I thought any darker of chocolate made the bark look too dark)
White Chocolate Ganache:
 - 4 oz. heavy whipping cream
 - 2 oz. white chocolate

My family so loved the Cookies and Cream Cake I made them a few weeks ago, that I had to make it in cupcake form. The hardest part about this recipe is probably the icing, and even that isn't terrible. You just need to be patient. (Something at which I do not excel!)

What You Need:
For the Cake:
1 Cake Mix* (White or Chocolate, whichever you prefer)
1-2 packages Oreo Cookies

For the Icing:
(This recipe is adapted from the Tasty Kitchen blog.)
3 Tbsp. flour
1/2 cup milk
1 tsp. vanilla
1/2 cup butter (unsalted) - at room temperature
1/2 cup sugar (not powdered sugar)

Yield: 20-24 cupcakes

*Note: You need the cake mix and the ingredients to make the batter. I always "doctor up" the cake batter, using milk and melted butter in the place of the water and oil.
If you want to make the striped cupcakes with chocolate and vanilla, you will also need 1 oz. melted chocolate and 1 Tbsp. cocoa powder.

My boys - and my husband - went away to scout camp for the weekend... I wanted to surprise them with a treat when they got home.
But... as (un)luck would have it, I was also without a car for the weekend while one was in the shop. I needed to make something with what we had at home. And I didn't have the camera, either, so that meant I couldn't take many pictures of the process.

What You Need:
For the Cake:
1 Chocolate Cake Mix* or Chocolate Cake Recipe
1-2 packages Oreo Cookies

For the Icing:
(This recipe is adapted from the Tasty Kitchen blog.)
5 Tbsp. flour
1 cup milk
1 Tbsp. vanilla
1 cup butter (unsalted) - at room temperature
1 cup sugar (not powdered sugar)

*Note: You need the cake mix and the ingredients to make the batter. I always "doctor up" the cake batter, using milk and melted butter in the place of the water and oil.

My sweet little boy got his tonsils and adenoids removed the week before Easter.
So, I decided I would try to make it a little easier for him to enjoy the Easter goodies by making an ice cream cake.
(I did not, however, get great pictures of the finished product because of the recovering child, and a family that was rather eager to dig in!)

I'd never made one before, and I have to say, even though it wasn't exactly easy or quick, it wasn't really hard either. It just takes some pre-planning. In order to get everything ready, you need to plan to get the pieces in the freezer at least a day ahead of time.

What You Need:
The recipes for each of these is linked or posted below
Chocolate Cake (homemade or from a mix)
Chocolate Ice Cream (homemade or store bought)
Chocolate Fudge Sauce (homemade or store bought)
Whipped Cream Frosting
Toppings:
Go nuts! Sprinkles, crushed up candy, mini chocolate chips, crushed Oreos, fresh fruit, etc.

Cupcakes and Cocktails. They go together perfectly. So, when I agreed to hold a little party to benefit my kids' school, I decided to make these... Chocolate Martinis with Chocolate Martini cupcakes.
(We also made some Strawberry Margarita Cupcakes, if you're interested in that recipe.)

1/2 tsp. baking soda
1 tsp. salt
1/4 cup milk
1/2 cup vanilla-flavored vodka*

For the Icing:
4 egg whites (at room temperature)

These mints are perfect for a special Valentine, or any special occasion. And they are really, really easy to make.

What You Need
4 oz. (half of a block) of cream cheese, at room temperature
1 pound (approx. 3-5 cups) powdered sugar
2 tsp. creme de menthe (or 1/2 tsp. peppermint extract)*
1 Tbsp. vegetable oil
 Either:
10 oz. Chocolate Almond Bark (or Candy Melts)
  or Semi-sweet chocolate for melting

*I prefer Creme de Menthe for my mint-flavored treats. I just think the taste is better. You can find it in the liquor store or liquor aisle (if you don't live in Minnesota). For this recipe, the clear version would be better. I was stuck with green because that's what I usually carry.
